Many expiration dates on heavily processed foods are there to "rotate stock"
Answered no to all the questions and since my family was game, used the mix for lemon cupcakes. :up: I can tell you that a cake mix 9 months past its "use by" date is still good.

found a slab of vanilla fudge in the back of my freezer... I don't remember where it came from. I'm guessing it's more than 3 years old. If i bought it at Niagara Falls.. that could 4 years. Eat it or no?

Even if it was fresh, I wouldn't eat vanilla fudge.

But assuming you bought it cuz you like vanilla fudge, I say, thaw it and see if it tastes good. I doubt it can hurt you.

Well since the cake is old news it doesn't matter what i say, but coming from a baking family I'd say I'd toss it personally. From the looks of the cupcakes it worked out ok, but the flour and baking soda/powder will lose it's effectiveness over time. It's like yeast, it won't rise as well. But I assume they give lots more time on those dates then you think.


As for the fudge, does your belly hurt eating that much?
