I've done portraits of people in front of falls and gotten the silk. It's tough, especially on the close-ups. I usually take one long exposure of 1 second and also take a quick exposre to grab their faces to combine the 2 to make sure they are sharp and not blinking.
that would probably be the best way unless they are willing to stand still for a second.
